INGREDIENTS:
-
One
cup varango flour (nishashta)
-
Two
and a half cups of sugar
-
Three
quarter cup of oil
-
Quarter
tea spoon of nutmeg
-
Half
tea spoon whole cardamom seeds
-
125
grammes of flaked blanched almonds and pistachios
-
Pinch
of saffron
-
Pinch
of orange and red food colouring
Cooking time approx.sixty minutes
METHOD:
-
Soak
the flour in two cups water for at least half an hour, overnight if
possible,
-
Sieve
this mixture a few times to remove the grit, and transfer to a large
saucepan,
-
Add
the remaining ingredients (except nuts) and cook on high heat, stirring
vigorously taking care that the mixture
does not stick to the pan and until it becomes a thick sticky mass virtually
lifting out of the pan,
-
Reduce
heat and add half the nuts,
-
Cook
for a few minutes, stirring frequently,
-
Transfer
into the oven at 160ºC (Gas Mark 3 or 325ºF) for fifteen - twenty minutes
-
Serve
in a shallow dish and decorate with remaining
